Halibut en Papillote

A simple, quick and delicious way to prepare fish and fresh vegetables.

Ingredients

  • 1 small spring onion or shallot finely sliced
  • kernels from 1 small ear of corn
  • 1 small carrot julienned
  • 1 small kohlrabi julienned
  • 6 cherry tomatoes
  • 2 halibut fillets ~5oz each, skin removed
  • salt and pepper
  • 6 lemon slices you can serve the remaining lemon alongside the dish for an extra burst of fresh lemon juice that is added just prior to eating
  • 2 sprigs fresh thyme

Instructions

  • Preheat oven to 425 degrees.
  • Cut two large hearts out of parchment paper and place them on a baking sheet.
  • On one side of each heart, place onion, corn, kohlrabi, carrot and tomatoes in a mound.
  • Lay halibut fillets on top of vegetable mound and season liberally with salt and pepper.
  • Place 3 lemon slices and a sprig of thyme on each piece of halibut.
  • Fold the sides of the heart closed tightly to create an air-tight packet. (See video link above.)
