Panettone French Toast with Apples and Pomegranate

Let me start by staying, this is not a typical breakfast in my house.  This is a rich and decadent holiday breakfast, suitable for Christmas morning, or a pre-soccer game brunch for 11 year olds.  ðŸ™‚

Panettone is a traditional Milanese sweet bread that is enjoyed around Christmas and New Years throughout Europe.  It is an egg bread with a light and fluffy texture, and usually contains raisins, currents, candied orange, or other dried fruits.   It is widely available in the US around the holidays.  I have seen it at Whole Foods and Trader Joes.

I had some panettone left over from a holiday snack mix that I was making, so I decided to use the remaining pannetone to make a holiday french toast.  The results were delicious.  Enjoy!

Cilantro Lime Crema

Cilantro Lime Crema

This is a great alternative to sour cream. Serve it with tacos, enchilandas, nachos, mexican pizza, grilled shrimp . . . the possibilities are endless.
Prep Time10 minutes

Ingredients

  • 1 handful cilantro
  • 1 small clove garlic
  • 1-2 TBSP lime juice
  • 1/3-1/2 cup greek yogurt fat free or 2%

Instructions

  • Puree all ingredients in food processor until smooth.
  • Serve as a condiment.

Kale Chips with Miso Yogurt Dip

Kale Chips with Miso Yogurt Dip

These kale chips make a great healthy snack. The dip also makes a great salad dressing.
Servings: 2

Ingredients

For the Kale Chips

  • 1 bunch kale
  • olive oil spray
  • sea salt

Directions

  • Preheat oven to 400 degrees.
  • Remove tough stems from kale leaves wash and spin dry.
  • Cut or tear kale into pieces and place on a parchment-lined baking sheet. One bunch of kale will fill two large baking sheets.
  • Spray leaves wtih olive oil and sprinkle with salt.
  • Bake for ~10 minutes until kale is crispy.

Instructions

For the Miso Yogurt Dip

  • 2 TBSP white miso
  • 1 TBSP lemon juice
  • 1 small clove of garlic
  • 2 TBSP seasoned rice vinegar
  • 2 TBSP plain greek yogurt (non-fat or 2%)
  • freshly ground black pepper

Directions

  • Place all ingredients in food processor and blend until smooth.
  • Serve with kale chips.
